Mexican Chocolate
Friday, June 15, 2012 at 02:18PM Because Quimixto is tropical, most of the days and nights were warm. There were a few nights, usually January, that were cool enough to brew this - such a treat.
Per person:
1/2 Cup very strong coffee
1/2 Cup whole milk or cream
4 Tablespoons melted Mexican chocolate*
1 Tablespoon brown sugar
1/2 Teaspoon each nutmeg and cinnamon
Bring to boil, all ingredients melted and combined, use a whisk. Pour into large cup and topped with sweetened whipped cream, may want to think of Kalua as one more ingredient.
*Mexican chocolate is a solid bar or round, usually contains good quality chocolate, ground nuts and spices, always cinnamon. Melts in a small amount of water, watch carefully and stir while melting.
