Because Quimixto is tropical, most of the days and nights were warm. There were a few nights, usually January, that were cool enough to brew this - such a treat.
Recently there was a family reunion here and the family chef prepared this for an ice cream topping. I use it, generously, as the dressing on top of fresh spinach - lovely salad. Just sprinkle sea salt and more fresh ground pepper over all.
Serves 4 as a salad dressing or 8 for ice cream topping:
4 cups sliced strawberries
1/2 cup sugar
3/4 cup balsamic vinegar
1 heaping tablespoon fresh and coarse ground pepper
Mix all together, allowing the strawberries to release their juice. Let stand an hour before serving.

Exciting, fantastic, wonderful, awesome, cool, beautiful, gorgeous....all over-used words and none of them come close to describing Balloon Fiesta in Albuquerque. It is always the first weekend through the second weekend of October. This year is starts Saturday, October 6th and ends Sunday the 14th. Cinnamon Morning is an easy drive to the balloon field and there is still some availability. A brunch is served at 9:30 and often it is still warm enough to eat on the patio. Plan on feeling like a kid again as you watch the balloons inflate and float into the blue New Mexico skies.
This large, extended family has met here more than one time, this is the "boys only trip". It is almost unimaginable, in todays world, the pure joy a family can have with the old traditions of food and conversation. It is FAMILY REUNION at its best! The gift of watching families come together at Cinnamon Morning is probably #1 in of my all time favorite things.
My guys, Digby and Casper, ever hopeful that something may drop.
Watching the creation of fresh pasta from the chef/physician in the outdoor kitchen was almost inspirational, but truly do not want anyone to think that I will be cooking dinner. Thank goodness the LAW does not allow me to do that.
